Values appear beneath the category headings and are distinguished from categories with a label icon. If needed, click on the "+" sign to the left of a category to expand its list of corresponding values.
Creating, deleting and renaming values is done in the same way as for categories (see Editing categories) except that you start by selecting the category which contain the value.
